Eddie Cofie, Catering Manager,
brings a wealth of local and international knowledge and experience to
Sydney Olympic Park Catering. Eddie's background and list of
achievements make interesting reading!
Eddie spent 8 1/2 years
as the Executive Chef at Acer Arena. Eddie joined Acer Arena originally
known as the Sydney SuperDome as part of the opening team in May 1999,
some of his highlights have included set-up and managing of all aspects
of the restaurants and catering facilities for the Sydney 2000 Olympic
Games, the 2001 Tennis Masters Cup and presiding in over 500 functions
and conferences serving in excess of 240,000 people.
For the
past 1 ½ years, Eddie has been operating his own business, a catering
unit based at Sydney’s Desalination Plant in Kurnell.
Eddie is
an accredited HACCP auditor and an assessment judge at Sydney’s Le
Cordon Blue Cookery School, based at Ryde’s Tafe College in NSW.
Eddie’s list of achievements include: - Winning the 2004 Restaurant & Catering Awards NSW- "Caterer of The Year" & "Caterer at a Major Event" - 2005 Restaurant & Catering Awards, NSW - “Venue Caterer of the Year”. Eddie’s former roles in Australia have included: - Heading up the opening of Sydney’s Avillion Hotel - 4½ years as Executive Chef of Ansett Australia’s in-flight Catering division - Customer Service Manager for Caterair Airport Services - 3½ years as Executive Chef for Australian Airlines. - Sous chef at the Regent Hotel, Sydney (now known as the Four Season hotel) - 2 years as a chef working on board P&O’s luxury cruise liner, The Canberra.
Prior
to working in Australia, Eddie spent time plying his trade in some of
London’s finest hotels, namely, The Grosvenor House Hotel, London’s
Savoy Hotel & the Le Meridian Hotel in Piccadilly.
